These inventories are very precious to evaluate the evolution of biodiversity.
At the beginning of the 20th century, menus showed above 500 different species of vegetables, while nowadays, only a few dozens are to be seen.
The Flavours Garden shows a traditional orchard, but also scarce and forgotten vegetables grouped into 5 squares.
